The Foodie's Fall Cornucopia, Week 5: Waldorf Salad

Cornucopia Have extra apples on hand that you're not sure how to use?  Or want something a bit tangy and sweet to accompany a main entree?  Then this simple, classic recipe is for you!  Adjust it to your health needs or taste buds' liking (i.e. substitute walnuts for pecans or leave the nuts out).  My momma gave me this recipe, and I have no idea where she got it from.  <grin>






Waldorf Salad


4 large red apples (I prefer Gala or Delicious), cored, seeded and chopped
1 cup chopped pecans
1 cup light mayonnaise
1 cup chopped celery
juice from 1 small lemon
1/4-1/2 cup sugar, depending on your preferred level of sweetness
1/2 cup of raisins (optional)

Combine all of the ingredients in a bowl and mix well.  Keep refrigerated.  Serves 4-6.
